Ingredients
- 1.5 kg Mixed seafood (prawns, clams, mussels, squid, fish)
- 400 g Short-grain rice (arborio)
- 1 large Onion (finely chopped)
- 4 cloves Garlic (minced)
- 400 g Tomatoes (peeled, chopped)
- 1.2 L Fish/seafood stock
- 80 ml Olive oil
- 1 bunch Fresh coriander
Method
- Clean all seafood: devein prawns, scrub clams/mussels, slice squid. Make quick stock with shells/heads if possible.
- Heat oil in wide shallow pot. Sauté onion and garlic until soft. Add tomatoes, cook 8-10 minutes until sauce-like.
- Add rice, stir 2 minutes to toast. Gradually add hot stock, stirring frequently like risotto, 15 minutes. Add squid and clams first, then prawns and fish pieces in stages so everything cooks perfectly. Simmer gently until rice al dente and seafood cooked (total 20-25 minutes rice cooking).
- Rest covered 5 minutes. Stir in chopped coriander. Serve from pot with lemon wedges.
