Ingredients

  • 200 g Short-grain rice (arborio or carnaroli)
  • 1.5 L Whole milk
  • 200 g Granulated sugar
  • 1 Lemon peel (large strip)
  • 1 Cinnamon stick
  • 1 Egg yolk (optional for richness)
  • for dusting Ground cinnamon

Method

  1. Rinse rice until water runs clear. In large heavy pot bring 500 ml water to boil with lemon peel and cinnamon stick. Add rice, reduce to gentle simmer and cook 10–12 min until water mostly absorbed.
  2. Gradually add hot milk in several additions (reserve 200 ml), stirring constantly to prevent sticking. Simmer very gently 35–45 min, stirring frequently, until rice is very soft and creamy.
  3. Stir in sugar in last 10 min. If using egg yolk, temper with hot rice mixture then stir back in off heat. Remove peel and stick.
  4. Pour into individual bowls or large dish. Cool to room temperature, then refrigerate. Dust generously with cinnamon before serving.
