Ingredients

  • 2 pieces (200g) Chicken breast
  • 2 cups Chicken stock
  • 1 cup (uncooked) Rice
  • 1 tbsp, sliced Ginger
  • 2 cloves, minced Garlic
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 stalks, chopped Spring onions
  • 1 tsp Salt
  • 1/2 tsp Pepper

Method

  1. Heat a large pot over medium heat and add the sesame oil, letting it shimmer for about 30 seconds before adding the sliced ginger and minced garlic, cooking until fragrant, about 2 minutes.
  2. Add the chicken stock to the pot, bringing it to a gentle boil, then reduce the heat to low and carefully place the chicken breasts in the liquid, covering them completely.
  3. Simmer the chicken on low heat for 15 minutes, or until the internal temperature reaches 165°F (74°C), checking the doneness by piercing the thickest part.
  4. While the chicken cooks, rinse the rice under cold water until the water runs clear, then drain thoroughly.
  5. In a separate saucepan, combine the rinsed rice with 1.5 cups of water, a pinch of salt, and a splash of soy sauce, bringing it to a boil over high heat.
  6. Reduce the heat to low, cover the saucepan, and let the rice simmer for 12-15 minutes, or until the water is absorbed and the grains are tender.
  7. Remove the chicken from the pot, let it rest for 5 minutes, then slice it thinly against the grain.
  8. Fluff the cooked rice with a fork, then drizzle a small amount of sesame oil over it, tossing gently to coat.
  9. Plate the sliced chicken over the bed of rice, arranging the sliced ginger and garlic on top for added aroma.
  10. Garnish with chopped spring onions, a squeeze of lime, and a sprinkle of pepper to taste, ensuring the dish looks bright and inviting.
  11. Serve the Chicken Hainanese Rice hot, accompanied by a side of cucumber slices and a small bowl of spicy chili sauce for those who enjoy a kick.
