Ingredients
- 1 cup All-Purpose Flour
- 1 cup Milk Alternative
- 2 Eggs
- 1 tbsp Sugar
- 1 tsp Butter Alternative
- 1 cup Fresh Fruit
- 1/4 cup Chopped Nuts
Method
- In a large bowl, whisk together the flour, milk alternative, eggs, sugar, and butter alternative, until smooth and free of lumps, about 2 minutes.
- Heat a small non-stick skillet over medium heat, about 1 minute, then pour in a small amount of the batter, tilting the skillet to evenly coat the bottom, and cook, until the bottom is lightly browned, 2-3 minutes.
- Loosen the clătită with a spatula, then flip and cook for an additional 1-2 minutes, until the other side is lightly browned, and repeat with the remaining batter, until all the clătite are cooked, about 10-12 minutes total.
- In a small bowl, mix together the fresh fruit and chopped nuts, then spoon the mixture onto each clătită, and roll up the clătită to enclose the filling, and repeat with the remaining clătite and filling, about 5 minutes total.
- To serve, place the clătite on a serving plate, and drizzle with any desired toppings, such as honey or maple syrup, then serve immediately, about 2 minutes total.
- Cook the clătite over medium heat, stirring occasionally, for an additional 2 minutes, until the clătite are lightly browned and crispy, then remove from heat and let cool for 1 minute before serving.
