Ingredients
- 1.5 lbs Cooked Shrimp
- 4 cups Mixed Greens
- 2 cups Cherry Tomatoes
- 1 cup Red Onion
- 1/4 cup Cilantro
- 2 tbsp Lime Juice
- 1 tbsp Olive Oil
- 1/4 cup Diced Jalapeño
Method
- In a large bowl, combine cooked shrimp, mixed greens, cherry tomatoes, and red onion, making sure all the ingredients are fresh and of high quality.
- Heat oil in a small skillet over medium heat, about 300°F, then add diced jalapeño and cook stirring occasionally until fragrant, 1-2 minutes.
- Add the cooked jalapeño to the bowl and toss to combine, making sure all the ingredients are well coated with the jalapeño and oil mixture.
- In a small bowl, whisk together lime juice and a pinch of salt, then pour over the salad and toss to coat, making sure all the ingredients are well coated with the lime juice and salt mixture.
