Ingredients
- 1 block paneer cheese
- 1 cup fresh spinach puree
- 2 tbsp ghee
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp coriander powder
- 0.5 tsp cayenne pepper
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp lemon juice
Method
- Heat ghee in a large skillet over medium-high until shimmering, about 2 minutes, then add paneer cheese and cook until browned on all sides, about 6–8 minutes.
- Remove paneer from skillet and set aside, then add more ghee if necessary and cook cumin, coriander, and cayenne pepper until fragrant, about 1 minute.
- Add garam masala, salt, and black pepper to skillet and cook for 1 minute, stirring constantly, then add spinach puree to skillet and stir to combine.
- Bring mixture to a simmer and cook until thickened, about 5 minutes, then add browned paneer back to skillet and stir to coat with sauce.
- Reduce heat to medium-low and simmer until paneer is fully coated with sauce, about 5 minutes, then stir in lemon juice and serve over a low-carb alternative such as zucchini noodles or shirataki rice.
- Let it rest for 5 minutes before serving to allow the flavors to meld together.
