Ingredients
- 2 large Sweet potatoes
- 2 medium Parsnips
- 1 head Cabbage
- 1 large Onion
- 3 cloves Garlic
- 1 teaspoon Caraway seeds
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/4 cup Vegetable oil
Method
- Boil sweet potatoes until tender, then peel and set aside.
- Peel and dice parsnips into 1-inch pieces.
- Shred cabbage and set aside.
- Chop onion into 1-inch pieces and set aside.
- Mince garlic and set aside.
- In a large skillet, heat vegetable oil over medium-high heat until shimmering, about 2 minutes.
- Add chopped onion and cook, stirring occasionally, until translucent, about 5 minutes.
- Add minced garlic and cook for an additional 1 minute.
- Stir in caraway seeds, turmeric, cumin, paprika, salt, and black pepper.
- Cook for 1 minute, until the spices are fragrant.
- Add shredded cabbage to the skillet and cook, stirring occasionally, until tender, about 5-7 minutes.
- Add boiled sweet potatoes to the skillet and stir to combine.
- Serve warm or at room temperature.
