  • 2 large Zucchinis
  • 2 leaves Kkaennip leaves
  • 2 tbsp Gochujang
  • 1 tsp Sesame oil
  • 1 tsp Soy sauce
  • 1 tsp Sugar
  • 1 tsp Rice vinegar

  3. Add soy sauce, sugar, rice vinegar, and black pepper, and cook stirring constantly for 1-2 minutes, until the sauce has thickened slightly.
  4. Cut the zucchinis in half lengthwise and scoop out the insides, leaving a 1/4 inch border around the edges.
  5. Stuff each zucchini boat with the sauce mixture and top with a kkaennip leaf.
  6. Bake at 375°F for 15-20 minutes, or until the zucchinis are tender and the filling is heated through.
